Wood Pigeon Bubble and Squeak

Serves: 4 | Preparation time: 5 mins | Cooking Time: 30 minutes


  • 4 Wood Pigeon Breasts
  • 150g Mash potato
  • 30g Sauteed Leeks
  • 30g Sauteed Savoy Cabbage
  • 100ml Oregano Jus


  1. Season and sear the wood pigeon in a hot pan and set a side.
  2. Mix the leeks and savoy cabbage into the mash, season then divide and shape into four equal cakes.
  3. Pan fry the potato cakes until golden brown.
  4. Place onto a serving plate, top with the sliced wood pigeon and garnish with oregano Jus.
