Harissa Rose Chicken

This Harissa Rose Chicken has some lovely flavours with a little heat. It's juicy and tender, has the crispiest skin, and is packed with flavour from the red pepper harissa paste and seasonings.

Serves 6

Ingredients

  • 12 boneless skin-on chicken thighs
  • 65g Olive Oil
  • 2 tbsp Harissa Rose
  • 1 tsp Smoked Paprika
  • 1 tbsp Sumac
  • 1 tsp Cumin
  • 2 Garlic Cloves
  • 30 ml Lemon Juice

Method

  1. In a small bowl, mix the olive oil, harissa paste, paprika, sumac, cumin, garlic, lemon juice, salt, and pepper, until smooth.
  2. Reserve 2-3 tablespoons of the mixture and set aside.
  3. Season the chicken. Generously coat the rest of the harissa seasoning mixture over the chicken and let it rest on a clean plate for at least 15 minutes.
  4. Make sure the seasoning covers the entire whole chicken thigh.
  5. Place the chicken on the preheated BBQ or griddle and grill for 15-20 minutes on each side until nicely charred and cooked through.
  6. Baste the chicken on both sides evenly with the remaining harissa paste during grilling.

Serve with Flatbreads, Tzatziki, shredded lettuce and a wedge of lemon.

Mediterranean Couscous Salad

This Mediterranean Couscous Salad is easy and healthy and ready in under 30 minutes! A simple salad loaded with lots of fresh veggies and an easy dressing makes this great for a meal on its own or a delicious side dish!

Serves 6

Ingredients

Dressing

  • 4 tbsp lemon juice (freshly squeezed)
  • 1 tbsp white wine vinegar
  • 2 tbsp olive oil
  • 2 cloves garlic (minced)
  • 1 tsp sugar
  • 1 tbsp Italian seasoning
  • 1/2 tsp salt (or to taste)
  • 1 tsp pepper (or to taste)

Salad

  • 100g large couscous (uncooked)
  • 1 tbsp tablespoon butter
  • 1 Cucumber (peeled, deseeded & chopped)
  • 130g cherry tomatoes (halved)
  • 65g black or green olives
  • 1 red pepper (diced)
  • 1/2 medium red onion (diced)
  • 3 tbsp mint (fresh, chopped)

Method

  1. Follow the instructions to prepare the cous cous. Add the butter to the cous cous whilst you’re preparing it and let it cool.
  2. In a small bowl or jar add all the dressing ingredients together and whisk well if using a jar, close the lid and shake well, until thoroughly combined.
  3. In a large bowl, add the prepared couscous and fluff it up with a fork.
  4. Add the rest of the salad ingredients. Pour the prepared dressing over and toss everything well together.
